In your cost analysis, you might add in the cost of the propane to cook them as well as the jars and energy costs to can them.

yes, those costs are important, but I don’t want to get it confused with price per pound retail because cooking (& even preserving) would also be something you would do with store bought so it’s the direct comparison. But I see your point! I wonder if they have propane tank dials that would tell me how much I’m using….
